The Mediterranean populations besides having a greater life expectancy also manifest a lower incidence of cardiovascular events and tumors. Tomatoes and olive oil are the main constituents of Mediterranean diet. What does contain the tomato so important to health? The answer to this question lies mainly in its red pigment: lycopene. What is the relationship between lycopene in olive oil? This latter makes it more absorbable by the human body!
In this publication are shown data on the most recent articles that have appeared in the literature on lycopene and are given more than possible clinical applications in the prevention of human diseases related to aging with special reference to ocular diseases characterized by angiogenesis. Regarding the lycopene as nutraceutical only two modes of industrial production were previously possible: the traditional extraction with organic solvents and chemical synthesis. This book presents a third procedure productive and innovative "chemical-free" which uses lycopene tomatoes grown without pesticides.
